Tannins are one of the defining components of traditional wine. They contribute to its structure, astringency and mouthfeel. In full-strength wines, tannins evolve over time, softening and integrating. This serves to create a smoother, more balanced drinking experience. But what happens when the alcohol is removed? Do tannins in non-alcoholic wine still develop with age, or does it remain “static”?

So let’s take a look: what are tannins, what their relationship to non-alcoholic wines is, and how you can maximise their effects to create the best NA drinking experience.
What are tannins, and why do they matter?
Tannins are a class of polyphenols. They are found in grape skins, seeds and stems, as well as in oak barrels used for ageing some wines. In red wines, for example, tannins add characteristic dryness and contribute to their complexity. This is one of the reasons why these wines are so much more than just fruity and acidic beverages. The presence of tannins helps wines age gracefully, allowing them to evolve from bold and structured to smooth and refined over time.
In traditional wines, tannins bind with proteins in your saliva, creating a drying sensation on your tongue. Over time, tannins polymerise, which means they form longer molecular chains. This leads to a softer and rounder mouthfeel. It’s why a young Cabernet Sauvignon can feel a little harsh and mouth-puckering, while a well-aged one is velvety and elegant.
How tannins behave in non-alcoholic wine
Since non-alcoholic wines are made from regular wines that have undergone de-alcoholisation, they still contain tannins, at least initially. However, the removal of alcohol does fundamentally change the wine’s chemistry. Alcohol plays a pivotal role in extracting tannins during fermentation and helps preserve them over time. Without alcohol, the interaction between tannins and other compounds shifts, affecting how they develop.
The absence of alcohol also speeds up oxidation, meaning non-alcoholic wines tend to degrade rather than improve with age. Instead of tannins mellowing and integrating, they can become disjointed, leading to a wine that feels flat or even slightly off-putting over time. This is why most non-alcoholic wines are designed to be consumed fresh rather than aged.
Does bottle ageing improve NA wine?
Unlike traditional wines, which can mature and develop greater complexity over decades, non-alcoholic wines have a shorter lifespan. The tannins present in these wines do not undergo the same gradual polymerisation process. That’s because alcohol acts as a stabilising agent that slows down oxidation and encourages structural evolution.
Most non-alcoholic wines are best consumed within a year or two of production. While they may initially have some tannic grip, that sensation often diminishes rather than evolves in a positive way. Over time, oxidation can lead to a loss of fruit character, a duller flavour profile and, in some cases, an unbalanced bitterness rather than a smooth, aged complexity.
Do some non-alcoholic wines have more noticeable tannins?
Although most non-alcoholic wines struggle to retain significant tannin development over time, some styles and production methods help preserve a firmer structure. Wines made from tannin-rich grape varieties, such as Cabernet Sauvignon, Tempranillo and Malbec, tend to have a stronger initial presence of tannins even after de-alcoholisation.
Additionally, some winemakers use oak ageing to help add depth and mouthfeel. Oak barrels naturally introduce additional tannins into the wine, helping to compensate for some of the structural loss that occurs during the de-alcoholisation process. For example, Luminara Chardonnay is aged in oak barrels , and so maintains more complexity than many other alcohol-free versions of the varietal.
Can you enhance tannins in non-alcoholic wine?
Since most non-alcoholic wines don’t naturally develop tannins over time, there are ways to enhance the tannic structure at home. A few techniques you can try include:
- Decanting – While decanting won’t cause the same level of evolution as ageing, it can help aerate the wine and slightly soften any harsh edges.
- Chilling or serving at slightly warmer temperatures – The perception of tannins can change with temperature. Some non-alcoholic reds taste more structured when served just below room temperature rather than too warm.
- Tannin powder or oak chips – Personally, I’m not a fan, but some people add small amounts of commercial tannin powder or soaking oak chips in non-alcoholic wine to introduce more structure.
The finish
While non-alcoholic wines do contain tannins, they don’t tend to develop in the same way as traditional wines. The absence of alcohol prevents ageing and polymerisation. So, generally, non-alcoholic wines are best enjoyed fresh. Ultimately, most non-alcoholic wine is best treated as a fresh and vibrant alternative rather than something meant for long-term cellaring.
